For the topping
  • 1 cup plain Greek yogurt Creates the creamy topping.

Method
 

Preparation
  1. Gather all ingredients for the pudding base.
  2. In a high-speed blender, combine all pudding base ingredients.
  3. Blend on medium-high for about 60 seconds, scraping down sides until smooth and mousse-like.
  4. Divide the blended pudding into four jars or containers, smoothing the tops slightly.
Topping
  1. In a small bowl, whisk together the topping ingredients until smooth and slightly airy.
  2. Spoon the topping evenly over each pudding jar.
  3. Dust cocoa powder generously on each jar.
Chilling
  1. Cover the jars and refrigerate for at least 2 hours, preferably overnight.
  2. Serve straight from the jar, optionally stirring in the cocoa before eating.

Notes

Leftovers can be stored in the fridge for 4-5 days. The chia will continue to thicken each day. Avoid microwaving the jars directly; instead, transfer to a safe bowl if needed.
