Ingredients

  • 2 pieces Sweet potatoes Sliced into 1/4 inch thick pieces
  • 1 tablespoon Olive oil For brushing each slice
  • 1 teaspoon Salt To sprinkle before and after roasting
  • 1 medium Mashed avocado Adds creaminess
  • 2 pieces Egg Cooked to preferred doneness

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice sweet potatoes into 1/4 inch thick slices.
  3. Brush both sides of the sweet potato slices with olive oil and sprinkle with salt.
Roasting
  1. Arrange the slices on a baking sheet without overcrowding.
  2. Bake for 20-25 minutes, flipping halfway through, until tender.
Assembly
  1. Remove from the oven and top each slice with mashed avocado and a fried egg.
  2. Serve immediately.

Notes

Store leftover sweet potato slices in an airtight container for 3-4 days. Reheat in an oven for best texture.
