Ingredients
  

Noodles and Pork
  • 8 oz wide Lo Mein noodles, cooked and rinsed Base of the dish, holds sauce well.
  • 1 lb ground pork Quick to cook and juicy, provides flavor.
  • 1 tbsp peanut oil For browning the pork.
  • 1/4 cup sliced green onions Used in browning and as garnish.
Sauce
  • 1/2 cup low-sodium chicken broth Liquid backbone of the sauce.
  • 3 tbsp mirin Adds sweetness and acidity.
  • 2 tbsp dark soy sauce Contributes savory flavor.
  • 1 tbsp minced garlic Aromatic depth.
  • 2 tsp grated ginger Adds warmth and flavor.
  • 1 tsp sesame oil For a toasty finish.
  • 1/2 tsp sriracha Optional for a touch of spice.
Vegetables
  • 4 cups coleslaw mix Adds crunch and sneaks in veggies.

Method
 

Cooking Noodles
  1. Cook wide Lo Mein noodles according to package instructions, then rinse under cool water to stop cooking and remove excess starch.
Browning Pork
  1. Heat peanut oil in a skillet over medium-high heat and brown ground pork with 1/4 cup sliced green onions until caramelized.
Whisking Sauce
  1. In a bowl, whisk together chicken broth, mirin, dark soy sauce, garlic, ginger, sesame oil, and sriracha.
Combining Ingredients
  1. Add cooked noodles, coleslaw mix, and the whisked sauce to the skillet with browned pork.
  2. Toss everything together for 2-3 minutes until well coated. Garnish with remaining green onions before serving.

Notes

Use pre-shredded coleslaw mix to save time. This recipe is forgiving; feel free to adjust the level of spice with sriracha based on personal preference.
