Filling
- In a blender, combine blueberries, chia seeds, honey or maple syrup, vanilla extract, and lemon juice.
- Blend until smooth, achieving a bright and glossy texture.
Assembly and Chilling
- Pour the blueberry mixture into the prepared crust and spread evenly.
- Refrigerate for at least 2-3 hours, or until set.
Notes
For best results, press the crust evenly and ensure all ingredients are well mixed in the blender. The pie can be made a day in advance and stored in the fridge.
