Method
 

Preparation
  1. In a medium bowl, mix crushed graham crackers or almond flour with melted coconut oil and a pinch of salt until combined.
  2. Press this mixture into the bottom of a pie pan to form the crust.
Filling
  1. In a blender, combine blueberries, chia seeds, honey or maple syrup, vanilla extract, and lemon juice.
  2. Blend until smooth, achieving a bright and glossy texture.
Assembly and Chilling
  1. Pour the blueberry mixture into the prepared crust and spread evenly.
  2. Refrigerate for at least 2-3 hours, or until set.

Notes

For best results, press the crust evenly and ensure all ingredients are well mixed in the blender. The pie can be made a day in advance and stored in the fridge.
