Method
 

Preparation
  1. In a bowl, mix olive oil, lemon juice, lemon zest, black pepper, garlic powder, honey, and salt.
  2. Marinate the chicken in the mixture for at least 30 minutes, preferably longer.
Cooking
  1. Preheat oven to 375°F (190°C).
  2. Place chicken in a baking dish and pour remaining marinade over the top.
  3. Bake for 25-30 minutes or until the chicken is cooked through.
  4. Garnish with chopped parsley before serving.

Notes

This chicken stores well for 3–4 days in an airtight container. Can also be frozen for up to 2 months. For variety, consider pairing with roasted vegetables or grains.
