Preparation
- In a bowl, mix olive oil, lemon juice, lemon zest, black pepper, garlic powder, honey, and salt.
- Marinate the chicken in the mixture for at least 30 minutes, preferably longer.
Cooking
- Preheat oven to 375°F (190°C).
- Place chicken in a baking dish and pour remaining marinade over the top.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Garnish with chopped parsley before serving.
Notes
This chicken stores well for 3–4 days in an airtight container. Can also be frozen for up to 2 months. For variety, consider pairing with roasted vegetables or grains.
