Preparation
  1. In a mixing bowl, combine Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Mix until smooth.
  2. If desired, fold in granola or chocolate chips.
Scooping
  1. Using a spoon or cookie scoop, drop dollops of the mixture onto a parchment-lined baking sheet.
Freezing
  1. Place the baking sheet in the freezer for about 2–3 hours or until the bites are fully frozen.
Storage

Notes

These bites are meant to be enjoyed straight from the freezer. Allow them to sit for 1-2 minutes at room temperature for a softer texture if desired. Proper storage will keep them fresh for up to a month.
