Ingredients
  

For the Oat Base and Topping
  • 1 cup old-fashioned oats Gives the bars a pleasing chew and rustic heartiness.
  • 3/4 cup all-purpose flour (or gluten-free flour blend) Ties the oat crumbs together.
  • 1/3 cup light brown sugar Adds sweetness and deepens flavor.
  • 1/4 teaspoon baking soda Helps with texture.
  • 1/4 teaspoon salt Balances sweetness.
  • 1/2 teaspoon cinnamon (optional) For warm spice flavor.
  • 6 tablespoons unsalted butter, melted (or coconut oil) Binds and browns the oat mixture.
  • 1 teaspoon vanilla extract Rounds out the flavors.
For the Blueberry Filling
  • 1 cup blueberries (fresh or frozen) Star ingredient for the filling.
  • 1/4 cup granulated sugar Sweetens the filling.
  • 2 teaspoons cornstarch Thickens the filling.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper.
  2. In a large bowl, combine oats, flour, brown sugar, baking soda, salt, and cinnamon (if using). Mix well.
  3. Stir in melted butter and vanilla extract until crumbly for the base.
Assembling the Bars
  1. Press half of the oat mixture into the bottom of the prepared pan.
  2. In a separate bowl, toss blueberries with granulated sugar and cornstarch. Spread this over the oat base.
  3. Crumble remaining oat mixture over the blueberries, gently pressing down.
Baking
  1. Bake for 35-40 minutes or until golden brown and bubbly.
  2. Allow to cool completely before lifting out and cutting into squares.

Notes

Store in an airtight container at room temperature for up to two days. For longer storage, keep in the refrigerator for up to five days. These bars freeze beautifully for up to three months.
