Ingredients
  

For the tacos
  • 4 slices bacon Crispy bacon adds a delicious flavor.
  • 2 tbsp canola oil Helps potatoes brown and prevents sticking.
  • 4 cups potatoes, cut into 1-inch cubes The heart of the taco; can use sweet potatoes for a sweeter flavor.
  • 2.5 tbsp taco seasoning mix Brings flavor without heat.
  • 8 pieces soft corn tortillas (6 inch) Crisp slightly on edges when baked.
  • 8 pieces eggs, well beaten Adds softness and lift.
  • 0.5 cup shredded Monterey Jack cheese Melts into a cozy blanket over the tacos.

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Spread bacon on a sheet pan and bake for 10 minutes until crispy, then chop.
  3. Heat canola oil in a skillet, add potato cubes, and season with taco seasoning. Cook over medium heat, stirring every 5 minutes for 15-20 minutes until tender.
  4. Scramble eggs in a skillet over medium heat, removing from heat while still slightly soft.
  5. Arrange tortillas upright in a baking dish. Fill each tortilla with 1/4 cup potatoes, scrambled eggs, chopped bacon, and 1 tbsp cheese.
  6. Bake assembled tacos at 375°F for 10 minutes until heated through and cheese is melted.
  7. Serve immediately.

Notes

Tip: Use a hot pan for potatoes to achieve a good sizzle. Warm tortillas bend better for filling. You can make parts ahead to save time in the morning.
