Ingredients
  

For the dough
  • 260 ml warm milk Helps activate yeast and creates a soft texture.
  • 10 g instant dry yeast Leavens the dough for light rolls.
  • 540 g all-purpose flour Provides structure to the rolls.
  • 65 g granulated sugar Adds sweetness to the dough.
  • 1 tsp salt Enhances flavor and strengthens gluten.
  • 1 large egg Adds richness and improves texture.
  • 80 g unsalted butter, very soft Enriches the dough.
For the filling
  • 250 g fresh or frozen strawberries Main fruit component.
  • 50 g granulated sugar Helps form a glossy filling.
For the glaze
  • 100 g cream cheese, softened Adds tang and texture to the glaze.
  • 40 g unsalted butter, softened Makes the glaze spreadable.
  • 60 g powdered sugar Sweetens and thickens the glaze.
  • 1 tsp vanilla extract Enhances flavors in the glaze.
  • 2 tbsp strawberry puree, cold Keeps glaze strawberry-flavored.

Method
 

Prepare the Filling
  1. Place strawberries in a saucepan with lemon juice and 50 g sugar. Cook over medium heat for about 10 minutes until thickened. Blend until smooth and refrigerate until cool.
Make the Dough
  1. In a stand mixer, combine flour, 65 g sugar, salt, and yeast. Briefly mix.
  2. Add warm milk, softened butter, and egg. Knead for 5-7 minutes until smooth.
  3. Let dough rise for 2 hours until it roughly doubles in size.
Assemble the Rolls
  1. Roll out the dough into a rectangle and spread cooled strawberry filling evenly.
  2. Roll tightly from one end and cut into 12 strips.
  3. Place rolls in a greased baking dish, let rise for an additional 30-60 minutes.
Bake the Rolls
  1. Preheat oven to 180°C (350°F).
  2. Bake rolls for 20-25 minutes or until golden brown.
Prepare the Glaze
  1. Beat cream cheese, butter, powdered sugar, vanilla, and strawberry puree until smooth.
  2. Spread glaze over slightly warm rolls and serve immediately.

Notes

These rolls can be stored at room temperature for up to two days in an airtight container. For longer storage, freeze individual rolls.
