Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the cottage cheese, honey, and vanilla extract. Mix until smooth.
Mixing
- Stir in the rolled oats, almond flour, baking powder, cinnamon, chocolate chips, and chopped nuts. Mix well but don’t overmix.
Baking
- Scoop tablespoon-sized portions of the dough onto the baking sheet, spacing them apart.
- Bake for 12-15 minutes or until golden brown and slightly firm.
Notes
Serve warm or pack for snacks. Store in an airtight container at room temperature for up to three days or freeze for a month.
