Sausage Egg and Cheese Breakfast Roll-Ups

Ingredients
  

For the filling
  • 8 large large eggs
  • 1 tablespoon milk Keeps eggs tender
  • 1 tablespoon butter For cooking eggs
  • 8 links breakfast sausage links Fresh or pre-cooked
  • 1 cup shredded cheddar cheese
For assembly
  • 8 pieces flour tortillas 8-inch size
  • Salt and pepper to taste For seasoning
  • Cooking spray To prevent sticking

Method
 

Preparation
  1. In a bowl, whisk together the eggs, salt, pepper, and milk until well combined.
  2. Heat a non-stick skillet over medium heat and add the butter.
  3. Pour in the egg mixture and scramble until just set. Remove from heat and set aside.
  4. In another skillet, cook the sausage links over medium heat until browned and cooked through. Remove from heat and set aside.
Assembly
  1. Lightly spray a clean skillet with cooking spray and warm it over medium heat.
  2. Lay an 8-inch flour tortilla flat and add a spoonful of scrambled eggs in the center.
  3. Place a cooked sausage link on top of the eggs.
  4. Sprinkle with some shredded cheddar cheese.
  5. Roll up the tortilla tightly to enclose the filling.
  6. Place the roll-up seam-side down in the pre-heated skillet and cook for 2-3 minutes, or until the tortilla is golden and slightly crisp. Flip and cook the other side for an additional 2-3 minutes.
  7. Remove from skillet and let cool slightly before serving. Repeat with the remaining tortillas and filling.

Notes

This recipe can be made ahead. Store cooked eggs and sausage separately in airtight containers for up to 3 days. Assembled roll-ups can be refrigerated un-toasted for up to a day.
