Cooking the Pasta

- While the pasta cooks, heat olive oil in a large skillet over medium heat.

- Add spinach in batches, seasoning with salt, and stir until wilted but bright green.
- Stir in cream cheese and 1/3 cup of reserved pasta cooking water until smooth.
- Add grated parmesan and nutmeg, mixing until well incorporated.
Combining and Serving
- Drain the pasta and add it to the skillet, tossing to combine with the sauce.
- Serve immediately with a drizzle of extra virgin olive oil, black pepper, and additional parmesan.
