Preparation
- Combine all ingredients (except butter/oil) in a blender and blend until smooth.
- Let the batter rest for 5-10 minutes to allow the oats to absorb the liquid.
- Heat a lightly oiled griddle or crepe pan over medium heat.
Cooking
- Pour 1/4 cup of batter onto the hot griddle and spread it thinly with the back of a spoon.
- Cook for 2-3 minutes per side, or until golden brown.
- Repeat with the remaining batter.
- Serve immediately with your favorite toppings.
Notes
For the first crepe, you might need to fine-tune the heat or how thinly you spread the batter. Keep a small amount of oil on hand to re-oil the pan between crepes.
