Preparation
- Mash or slice bananas into 1/3 inch thick medallions.
- In a bowl, whisk together the oat or almond milk, maple syrup, vanilla extract, and cinnamon.
- In another bowl, combine flour and baking powder.
- Mix the wet and dry ingredients until just combined; small lumps are okay.
Cooking
- Preheat a skillet over medium-low heat and add a small amount of butter.
- Drop small spoonfuls of batter onto the skillet.
- Cook until the edges set and the center looks slightly glossy, then flip.
- Continue to cook until both sides are golden brown.
- Remove from the skillet and keep warm; repeat with remaining batter.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. These bites can also be frozen for 1-2 months. Reheat in a skillet or toaster oven for best texture.
