  • 1 cup quinoa Rinsed before cooking
  • 2 cups water or vegetable broth Using broth adds more flavor
  • 1 cup hummus Homemade or store-bought
Vegetables
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 avocado, sliced Slice just before serving to prevent browning
  • 1/4 cup red onion, diced Can be soaked in water to mellow the flavor
Finishing Touches
  • 2 tablespoons olive oil
  • Salt and pepper to taste Taste before adding additional salt due to hummus
  • Fresh parsley for garnish

Method
 

Cooking Quinoa
  1. Rinse the quinoa under cold water and then cook it in a pot with water or vegetable broth according to package instructions.
Preparing Vegetables
  1. While the quinoa cooks, prepare the veggies: dice the cucumber, cherry tomatoes, bell pepper, and red onion, and slice the avocado.
Assembling the Bowl
  1. Once the quinoa is cooked, let it cool for a few minutes.
  2. In a bowl, layer the quinoa first, then add a generous dollop of hummus on top.
  3. Arrange the diced cucumbers, cherry tomatoes, bell peppers, red onions, and avocado around the hummus.
  4. Drizzle olive oil over the bowl and season with salt and pepper to taste.
  5. Garnish with fresh parsley before serving.

Notes

The bowl is great for meal prep and can be customized with various veggies. For leftovers, store components separately to maintain freshness.
