Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, drizzle olive oil and place blocks of feta cheese in the center.
  3. Surround the feta with cherry tomatoes and spinach.
  4. Sprinkle minced garlic, red pepper flakes, salt, and pepper over the top.
Baking the Dish
  1. Bake in the preheated oven for about 20 minutes, or until the feta is soft and tomatoes are roasted.
  2. Remove from the oven and make wells for the eggs in the feta and tomatoes.
  3. Crack the eggs into the wells and return to the oven for an additional 10-15 minutes, or until the eggs are cooked to your liking.
  4. Top with fresh herbs before serving and enjoy!

Notes

This dish reheats well with a few considerations. Cool to room temperature and store in an airtight container in the refrigerator for up to three days. Reheat gently to preserve texture.
