- If using frozen hash browns, follow package instructions to cook until golden brown and crispy. Set aside on a plate.
- In a separate pan over medium heat, scramble the eggs until fully cooked. Season with salt and black pepper to taste, then set aside.
- In a bowl, use a fork to smash the avocado until mostly smooth, seasoning with salt and black pepper to enhance the flavor.
Assembly
- Place the cooked hash browns on a serving plate.
- Spread a generous layer of smashed avocado evenly over each hash brown.
- Divide the scrambled eggs among the hash browns, placing them on top of the avocado.
- Spoon cottage cheese evenly over the scrambled eggs on each hash brown.
- Sprinkle Everything But The Bagel seasoning over the loaded hash browns if desired, then serve immediately.
Notes
Serve immediately for the best texture. If you have leftovers, store components separately when possible. Reheat hash browns in a skillet to re-crisp.
