  1. In a mixing bowl, combine chia seeds, almond milk, maple syrup, lemon zest, lemon juice, and a pinch of salt.
  2. Whisk the mixture well to combine everything thoroughly.
  3. Let it sit for about 5 minutes, then whisk again to prevent clumping.
  4. Cover the bowl and refrigerate for at least 2 hours or overnight to allow the pudding to thicken.
  5. Serve chilled, and enjoy as is or with your favorite toppings like fresh fruit or granola.

Notes

For quicker mornings, you can mix the night before. If the pudding is too thick, stir in a splash of milk; if too thin, add another teaspoon of chia and let it sit for 30 minutes. This pudding is fridge-stable for up to 4 days.
