Preparation
  1. Add the cottage cheese, almond flour, honey, vanilla extract, lemon zest, and salt to a mixing bowl.
  2. Mix gently until a thick, scoopable mixture forms.
  3. If needed, drain excess liquid from the cottage cheese.
  4. Fold in the blueberries carefully to avoid crushing them.
  5. Chill the mixture in the refrigerator for 15–20 minutes to firm up.
  6. Scoop and roll the mixture into bite-sized balls and place on a parchment-lined tray.
  7. Optional: Bake at 325°F (160°C) for 8–10 minutes for a firmer texture, or enjoy chilled.
