  • 2 tablespoons Lime Juice Fresh juice is optimal.
  • to taste none Seasonings (salt, pepper, etc.) Adjust according to taste.
Main Components
  • 1 cup Rice Brown rice for extra fiber or quinoa for lower-carb option.
  • 2 pieces Avocado Select ripe but firm avocados for slicing.

Preparation
  1. Start by cooking the rice according to package instructions.
  2. While the rice cooks, season the chicken with salt, pepper, and other desired seasonings.
  3. Warm the honey in a small saucepan until it bubbles, then mix in lime juice.
Cooking
  1. Sear the chicken in a skillet on medium-high heat until golden brown on both sides.
  2. Reduce heat and add the honey-lime mixture to the pan, ensuring the chicken is glazed without burning. Cook until chicken is fully cooked (internal temp of 165°F).
Assembly
  1. Slice the cooked chicken and avocado.
  2. Layer the rice on plates, top with chicken slices, and arrange avocado slices on top.

Notes

This dish is great for meal prep; store components separately to maintain freshness. Sliced avocado should only be added at the time of serving to prevent browning.
