Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix together the cottage cheese, rolled oats, honey or maple syrup, eggs, lemon zest, lemon juice, baking powder, vanilla extract, and salt.
  3. Gently fold in the blueberries.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
Baking
  1. Bake for 25-30 minutes or until the top is golden and firm to the touch.
  2. Allow to cool slightly before slicing and serve warm.

Notes

Serve warm for best results; leftovers can be stored in the refrigerator for up to 4 days or frozen for 1-2 months. Reheat gently to retain texture.
