Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Lightly spray a muffin tin with nonstick cooking spray.
  2. Blend egg whites, cottage cheese, garlic powder, salt, and pepper until smooth and frothy.
  3. Pour the mixture into the muffin cups, filling each about 2/3 full.
  4. Sprinkle spinach, red bell pepper, and optional shredded cheese evenly into each cup.
Baking
  1. Bake for 18-20 minutes, or until set and golden around the edges.
  2. Cool briefly before removing from the tin. Serve warm or store in an airtight container.

Notes

These bites can be stored in an airtight container for up to 4 days in the fridge or frozen for up to 2 months. Reheat in a 300°F oven or microwave for best results.
