Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the cottage cheese, rolled oats, honey (or maple syrup), vanilla extract, baking powder, and salt. Mix until well combined.
- If using, fold in chocolate chips.
- Drop tablespoon-sized portions of the dough onto a lined baking sheet.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow to cool before serving.

These cookies can be stored in an airtight container at room temperature for up to 2 days, or refrigerated for up to 5 days. They freeze well for up to 2 months.
