- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine cottage cheese and eggs until uniform.
- Add almond flour, oat flour, nutritional yeast, baking powder, and salt; mix until well combined.
- Stir in olive oil until well incorporated.
- Pour the batter into a greased loaf pan.
- Bake for 35-40 minutes until golden brown and a toothpick comes out clean.
- Let cool before slicing.
Notes
Grease the pan to keep slices intact and monitor baking time closely to avoid overbaking. Letting the loaf cool helps it finish setting.
