  • 3 medium Ripe bananas Should be very ripe with brown spots for best sweetness.
  • 1 cup Protein powder Any protein powder can work; different types may affect texture.
  • 2 cups All-purpose flour Can also use a blend of whole-wheat flour.
  • 2 large Eggs Can be at room temperature for easier mixing.
  • 1/2 cup Neutral oil or melted butter Choose based on preference.
  • 1 teaspoon Baking soda For leavening.
  • 1 teaspoon Baking powder For additional lift.
  • 1/2 cup Sugar, maple syrup, or honey Adjust sweetness to taste; bananas provide natural sweetness.
  • 1/2 teaspoon Salt Enhances flavor.
  • 1 teaspoon Vanilla extract Improves aroma and flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan.
  2. Mash the ripe bananas in a bowl until mostly smooth with a few chunks for texture.
  3. Measure out all your dry ingredients (flour, protein powder, baking soda, baking powder, salt) and wet ingredients (mashed bananas, eggs, oil, vanilla) separately.
Combining
  1. In a large bowl, combine the wet ingredients and mix gently.
  2. Gradually add in the dry ingredients until just combined, making sure not to overmix.
  3. The batter should be thick but pourable. Aim for a uniform texture with some banana flecks.
Baking
  1. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  2. Optional: Press banana slices or nuts on top for garnish.
  3. Bake in the preheated oven for about 60 minutes or until a toothpick inserted in the center comes out mostly clean.
  4. Let the bread cool in the pan for 10–15 minutes before transferring to a wire rack.

Notes

Allow the loaf to cool completely before slicing to avoid gummy crumbs. This recipe is adaptable, feel free to add nuts or spices to customize it.
