Preparation of Ingredients
  1. In a bowl, combine the diced cucumbers, sliced green onions, and chopped herbs.
Make the Dressing
  1. In another bowl, mix the Greek yogurt (or sour cream) with lime juice, salt, and pepper to create the dressing.
Cook the Shrimp
  1. Cook the shrimp in a skillet over medium heat until they turn pink and opaque, about 3–4 minutes.
Combine and Chill
  1. Toss the cooked shrimp with the cucumber mixture and drizzle with the creamy dressing.
  2. Let the salad rest in the refrigerator for a short time before serving.
