Ingredients
  

For the Dough
  • 1.5 cups almond flour The backbone of the dough.
  • 0.25 cups cashew butter (or peanut butter) Choose according to your preference.
  • 0.25 cups maple syrup Adds sweetness and helps bind the dough.
  • 2 tbsp melted coconut oil Keeps the dough pliable.
  • 1 tsp vanilla extract Enhances flavor.
  • 0.25 tsp salt Balances sweetness.
  • 0.25 cups chocolate chips (for the dough) Incorporated for chocolate flavor.
For the Topping
  • 1 cups chocolate chips For melting and spreading on top.
  • 1 tsp coconut oil Used to smooth melted chocolate.
  • Flaky sea salt Optional for garnish.

Method
 

Mix the Dough
  1. In a bowl, add almond flour, cashew butter, maple syrup, melted coconut oil, vanilla, and salt. Mix together until evenly combined.
  2. Stir in the chocolate chips.
Flatten the Dough
  1. Transfer the cookie dough to parchment paper and firmly press it to flatten to about 1/2-inch thick.
Melt and Spread the Chocolate
  1. In a small bowl, add chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between, until fully melted.
  2. Spread the melted chocolate over the cookie dough and sprinkle with flaky sea salt.
Chill
  1. Chill cookie dough bark in the freezer for 10 minutes to set, then chop into large chunks.
