- In a large skillet, heat a splash of olive oil over medium heat.
- Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
- Add the ground turkey to the skillet, breaking it apart with a spatula, and cook until browned, about 7-10 minutes.
- Stir in the taco seasoning, black beans, corn, and diced tomatoes.
- Cook for another 5-10 minutes until heated through.
- Season with salt and pepper to taste.
- Serve in tacos, bowls, or directly from the skillet, topped with your choice of toppings.
Notes
Store leftovers in an airtight container for 3-4 days, or freeze for 2-3 months. Reheat gently before serving.
