For the Zucchini Boats
  • 2 medium zucchini Scooped out to create boats
  • 1 pound ground beef Main protein for filling
  • 1 small onion, chopped Adds sweetness and depth
  • 2 cloves garlic, minced For flavor
  • 1 cup marinara sauce Moisture for filling
  • 1 teaspoon Italian seasoning Adds herbiness
  • Salt and pepper to taste For seasoning

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cut zucchini in half lengthwise and scoop out the center to create boats.
Stovetop Filling
  1. In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned. Drain excess fat.
  2. Stir in the marinara sauce, Italian seasoning, salt, and pepper.
Oven Finishing
  1. Fill the zucchini boats with the beef mixture and place in a baking dish.
  2. Top with shredded cheese.
  3. Bake for 25-30 minutes or until the zucchini is tender and the cheese is bubbly.

Notes

Make-ahead by preparing the filling a day in advance. Leftovers can be stored in the fridge for 3-4 days.
