Method
 

Preparation
  1. Preheat the oven to 350°F (180°C). Line an 8-inch x 8-inch brownie pan with parchment paper and slightly oil it.
  2. In a microwave-safe bowl, melt 1/3 cup of chocolate chips and coconut oil together. Set aside to cool for a few minutes.
  3. In a mixing bowl, whisk the dry ingredients: oat flour, cocoa powder, sweetener, baking powder, and salt. Set aside.
Mixing
  1. In another large bowl, whisk together the plain Greek yogurt, egg, vanilla extract, almond milk, and the cooled melted chocolate mixture.
  2. Sift the dry ingredients into the wet ingredients and stir with a silicone spatula until just combined.
  3. Stir in the remaining 1/3 cup chocolate chips and distribute evenly in the batter.
Baking
  1. Pour the batter into the prepared brownie pan.
  2. Bake for 20-23 minutes or until a toothpick inserted comes out clean.
  3. Cool on a wire rack for an hour before cutting.

Notes

Cool brownies fully before cutting to avoid crumbling. Serve warm or at room temperature with a dusting of cocoa or a spoonful of Greek yogurt and berries.
