Preparation
- Preheat the oven to 350°F (180°C). Line an 8-inch x 8-inch brownie pan with parchment paper and slightly oil it.
- In a microwave-safe bowl, melt 1/3 cup of chocolate chips and coconut oil together. Set aside to cool for a few minutes.
- In a mixing bowl, whisk the dry ingredients: oat flour, cocoa powder, sweetener, baking powder, and salt. Set aside.
Mixing
- In another large bowl, whisk together the plain Greek yogurt, egg, vanilla extract, almond milk, and the cooled melted chocolate mixture.
- Sift the dry ingredients into the wet ingredients and stir with a silicone spatula until just combined.
- Stir in the remaining 1/3 cup chocolate chips and distribute evenly in the batter.
Baking
- Pour the batter into the prepared brownie pan.
- Bake for 20-23 minutes or until a toothpick inserted comes out clean.
- Cool on a wire rack for an hour before cutting.
Notes
Cool brownies fully before cutting to avoid crumbling. Serve warm or at room temperature with a dusting of cocoa or a spoonful of Greek yogurt and berries.
