Ingredients
  

For the Burritos
  • 12 large large eggs
  • 1/2 cup milk helps achieve a creamy scramble
  • 1 pound breakfast sausage, cooked and crumbled use pre-cooked for quicker prep
  • 1 cup shredded cheddar cheese adds sharpness and color
  • 1 cup shredded Monterey Jack cheese provides a creamy bite
  • 12 (10-inch) flour tortillas large enough for ample filling
  • 1 tablespoon vegetable oil prevents eggs from sticking
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, whisk together eggs, milk, salt, and pepper.
  2. Heat vegetable oil in a non-stick skillet over medium heat.
  3. Pour egg mixture into the skillet and cook, stirring occasionally, until set but still moist.
  4. Remove eggs from skillet and set aside.
Assembly
  1. Warm tortillas slightly to make them pliable.
  2. Layer each tortilla with a portion of scrambled eggs, crumbled sausage, cheddar cheese, and Monterey Jack cheese.
  3. Fold in the sides of the tortillas and then roll them up tightly to form burritos.
  4. Wrap each burrito individually in plastic wrap and then in aluminum foil.
  5. Place wrapped burritos in a freezer-safe bag or container.
  6. Freeze for up to 3 months.
Reheating
  1. To reheat, remove foil and plastic wrap, wrap in a damp paper towel, and microwave on high for 1-2 minutes, or until heated through.

Notes

Make sure to warm the tortillas to prevent cracking. Keep the wrapped burritos in a labeled freezer-safe bag for easy access. Consider reheating in the oven for better texture if desired.
