  • 1 large egg Acts as a binder and lift.
  • 1/2 cup grated cheese (cheddar, pepper jack, or gruyere) Provides flavor and stretch.
  • 1 teaspoon finely chopped fresh herbs (thyme or rosemary) Adds a fresh aroma.
  • Salt and black pepper to taste Simple seasoning.
  • 1 pinch cayenne (optional) For a hint of heat.

Method
 

Preparation
  1. Lightly toast bread or broil each side for 1–2 minutes.
  2. Preheat oven to 400°F (toaster oven: bottom rack, BAKE setting).
  3. Beat egg in a small bowl until fully combined.
  4. Stir in cheese, herbs, salt, and pepper.
  5. Spread mixture to edges of toasted bread; sprinkle cayenne if using.
  6. Bake for 10–12 minutes until puffed and golden.

Notes

Best eaten the day they’re made, but can be stored in the fridge for 1-2 days. Reheat in an oven or toaster oven for best results.
