Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, blend the cottage cheese and eggs until smooth.
- Stir in shredded cheese, diced vegetables, salt, and pepper.
- Grease a muffin tin with cooking spray or oil.
- Pour the mixture into the muffin cups, filling them about 3/4 full.
- Bake for 20-25 minutes or until the egg bites are set and lightly golden on top.
- Allow to cool slightly before removing from the muffin tin. Serve warm or refrigerate for meal prep.
Notes
Great for meal prep; store in an airtight container in the refrigerator for up to 4 days or freeze for 2 months. Can be reheated in the microwave or oven.
