  • 1 cup cottage cheese Full-fat or low-fat
  • ¼ cup grated Parmesan cheese
  • ¼ cup chicken broth Can substitute with vegetable broth

  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

Preparation
  1. Preheat oven to 375°F (190°C). Lightly spray an 8×8-inch baking dish with olive oil.
Blending
  1. Add cottage cheese, Parmesan, chicken broth, garlic powder, onion powder, smoked paprika, salt, and pepper to a blender. Blend for 30–45 seconds, scraping down sides as needed, until completely smooth and creamy.
Assembly and Baking
  1. Place chicken breasts in the prepared baking dish. Pour the blended sauce evenly over the chicken, ensuring each piece is fully coated.
  2. Bake uncovered for 30–35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is bubbling with light golden spots on top.
Serving
  1. Let the dish rest for 5 minutes before serving to allow juices to redistribute. Garnish with fresh parsley or chives if desired.

Notes

Make-ahead: You can blend the sauce and assemble the chicken in the baking dish, then cover and refrigerate for up to 24 hours before baking. Reheat leftovers gently to maintain moisture.
