For the Filling
  • 1 cup cottage cheese (fresh, room temperature) Brings moisture, creaminess, and protein.
  • 2 cups fresh spinach (chopped) Adds volume and freshness.
  • 4 large eggs Provides structure and richness.
  • 1 cup milk Lightens the custard.
  • 1 small onion (finely chopped) Adds aromatic depth.
  • 1 teaspoon garlic powder Provides savory lift.
  • ½ teaspoon salt Essential for flavor enhancement.
  • ½ teaspoon pepper Brings warmth.
  • 1 cup cheddar cheese (shredded, divided) Adds comfort and flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Sauté the finely chopped onion in a pan over medium heat until softened, about 5 minutes.
  3. In a large bowl, mix together cottage cheese, sautéed onions, chopped spinach, eggs, garlic powder, salt, pepper, and half of the cheddar cheese. Stir until well combined.
  4. Spray a baking dish with nonstick cooking spray. Pour the mixture into the dish and top with the remaining cheddar cheese.
Baking
  1. Bake in the preheated oven for approximately 30-35 minutes, or until set and golden brown on top.
  2. Allow to cool slightly before slicing. Serve warm or at room temperature.

Notes

This quiche stores well in the refrigerator for up to 4 days. Reheating gently in a 325°F oven prevents rubberiness. Can be paired with salads or grain sides for variation.
