Ingredients
  

For the Frozen Yogurt Base
  • 1 cup non-dairy yogurt (plain and unsweetened) Provides tang and creaminess.
  • 2 tablespoons protein powder (optional) Can add substantiality for older kids.
  • 1/4 cup cashew butter (or any nut/seed butter) Adds richness to the bites.
  • 1 teaspoon vanilla extract Brings cookie-dough flavor.
  • 2 tablespoons maple syrup (or honey) Provides sweetness without overpowering.
For the Chocolate Coating
  • 1 1/2 cups chocolate chips Main component for coating.
  • 2 tablespoons coconut oil Helps chocolate flow smoothly.

Method
 

Mix
  1. Combine the non-dairy yogurt, protein powder (if using), cashew butter, vanilla, and maple syrup in a bowl until smooth.
Freeze the Dollops
  1. Scoop the mixture onto a parchment-lined baking sheet and freeze for at least 1 hour, or until completely solid.
Chocolate Coat
  1. Melt together chocolate chips and coconut oil until smooth. Dip each frozen yogurt bite into the melted chocolate to coat.
  2. Return to the baking sheet and freeze for at least another 30 minutes until the chocolate has hardened.

Notes

These bites are easy to make ahead and store well in an airtight container in the freezer. They’ll keep for several weeks. Enjoy them straight from the freezer or allow them to soften slightly at room temperature before eating.
