Ingredients
  

Dry Ingredients
  • 1/2 cup Rolled Oats, blended into powder 50g
  • 1 cup Almond Flour 96g
  • 2 tbsp Ground Flaxseed 14g
  • 1/4 cup Vanilla Protein Powder 30g
  • 1 tsp Cinnamon 5g
  • 1/4 tsp Nutmeg 1g
Wet Ingredients
  • 1/4 cup Almond Butter 60g
  • 2 tbsp Maple Syrup 30ml
  • 1/4 cup Unsweetened Almond Milk 60ml
Coating and Glaze
  • 2 tbsp Powdered Sugar 16g
  • 1 tbsp Cinnamon 5g
  • 2 tbsp Cream Cheese or Dairy-free Alternative 30g
  • 3 tbsp Powdered Sugar (for glaze) 24g
  • 1-2 tsp Unsweetened Almond Milk (for glaze) 5-10ml

Method
 

Prepare the Dough
  1. Blend rolled oats into a fine powder. In a large bowl, combine powdered oats, almond flour, ground flaxseed, protein powder, cinnamon, and nutmeg. Mix well.
Combine Wet and Dry
  1. Add almond butter and maple syrup to the dry ingredients. Stir until crumbly.
Add Almond Milk
  1. Gradually add almond milk, 1 tbsp at a time, mixing until a sticky but firm dough forms. Adjust with more almond flour or milk as needed.
Form and Coat Bites
  1. Roll dough into 1-inch balls. Mix powdered sugar and cinnamon for coating. Roll each bite in the cinnamon-sugar mixture.
Chill
  1. Place coated bites on parchment paper and refrigerate for at least 30 minutes to firm up.
Prepare Glaze
  1. Whisk together cream cheese, powdered sugar, and almond milk (starting with 1 tsp) until smooth.
Decorate and Serve
  1. Drizzle glaze over chilled bites. Serve immediately or store in the fridge.

Notes

These protein bites can be refrigerated for up to a week or frozen for up to a month. They are best enjoyed cool or at room temperature.
