  • 1 ripe avocado mashed avocado Select a ripe avocado that yields slightly to gentle pressure.
  • 1 cup shredded cheese (e.g., cheddar or mozzarella) Either cheese option works well.

Method
 

Assembling and Grilling
  1. Heat a skillet over medium heat.
  2. Spread butter on one side of each slice of bread.
  3. In a bowl, mix shredded chicken, mashed avocado, salt, and pepper.
  4. Place one slice of bread butter-side down in the skillet.
  5. Spread the chicken and avocado mixture on top and sprinkle with cheese.
  6. Top with the second slice of bread, butter-side up.
  7. Cook until golden brown, then flip and cook the other side until the cheese melts.
  8. Remove from skillet, slice, and serve warm.

Notes

This sandwich is perfect for make-ahead or leftovers. Prepare chicken and avocado a day ahead, storing separately. Reheat in a skillet or panini press for best results.
