Assembling and Grilling
- Heat a skillet over medium heat.
- Spread butter on one side of each slice of bread.
- In a bowl, mix shredded chicken, mashed avocado, salt, and pepper.
- Place one slice of bread butter-side down in the skillet.
- Spread the chicken and avocado mixture on top and sprinkle with cheese.
- Top with the second slice of bread, butter-side up.
- Cook until golden brown, then flip and cook the other side until the cheese melts.
- Remove from skillet, slice, and serve warm.
Notes
This sandwich is perfect for make-ahead or leftovers. Prepare chicken and avocado a day ahead, storing separately. Reheat in a skillet or panini press for best results.
