  • 1 cup Cucumber (Diced) Provides freshness.
  • 1 cup Carrots (Shredded) Contributes mild sweetness.
  • 0.5 cup Red onion (Diced) Offers small bite.
  • 1 Avocado (Sliced) Adds creaminess.

Method
 

Preparation
  1. Heat olive oil in skillet, season chicken, and cook until golden and cooked through.
  2. Stir in buffalo sauce and melted butter, simmer until coated.
  3. Prepare rice or cauliflower rice and season lightly.
  4. Chop celery, cucumber, carrots, onion, and avocado.
Assembly
  1. Layer rice, buffalo chicken, vegetables, and avocado.
  2. Drizzle with dressing and garnish with green onions.

Notes
