Ingredients
  

For the blueberry compote
  • 1/2 cup blueberries Fresh or frozen blueberries
  • 2 tbsp honey or maple syrup To sweeten as desired
  • 1 tsp lemon juice For brightness in flavor
  • 1/2 tsp cornstarch (optional) For thicker compote if desired
For the yogurt base
  • 1 cup Greek yogurt For creaminess and protein
  • 1 tsp vanilla extract For flavor enhancement

Method
 

Making the blueberry compote
  1. In a small saucepan, combine blueberries, honey, and lemon juice over medium heat and simmer for 5 minutes until blueberries soften.
  2. If using, dissolve cornstarch in a tablespoon of cold water and stir into the blueberry mixture to thicken.
  3. Remove from heat and cool completely.
Preparing the yogurt
  1. Mix Greek yogurt and vanilla extract in a bowl until smooth. Adjust sweetness with more honey or maple syrup if desired.
Building the bites
  1. Spoon yogurt into silicone molds or mini muffin tins, filling about three-quarters full.
  2. Add a spoonful of cooled blueberry compote on top of each yogurt portion and swirl gently with a toothpick to create a marbled effect.
Freezing
  1. Freeze molds for at least 3 hours until solid.
  2. Remove frozen bites from molds and store in an airtight container in the freezer.
  3. Let sit for 2-3 minutes before eating for best texture.

Notes

These yogurt bites can be stored in the freezer for a month or more. Ensure to store in a single layer in an airtight container.
