Ingredients
  

For the Donuts
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup whole milk (or almond milk)
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
For the Coating
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 4 tablespoons unsalted butter, melted

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and grease your donut pan with non-stick spray or butter.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, combine the milk, eggs, melted butter, and vanilla extract. Whisk until smooth.
  4. Gradually add the wet ingredients into the dry ingredients, stirring gently with a spatula until just combined. Be careful not to overmix.
  5. Spoon the batter into a piping bag or use a spoon to fill each donut cavity about 3/4 full. Smooth the tops if necessary.
Baking
  1. Bake for 10-12 minutes, or until the donuts spring back when lightly touched.
  2. Let them cool in the pan for 5 minutes before transferring to a wire rack.
Coating
  1. For the coating, mix the granulated sugar and cinnamon in a shallow bowl.
  2. Brush the warm donuts with melted butter and roll them in the cinnamon sugar mixture until evenly coated.

Notes

Store the donuts at room temperature in an airtight container for up to two days. If it's warm and humid, keep them in the fridge to slow sogginess. To refresh a donut, warm it for 10-15 seconds in the microwave.
