Preparation
  1. Preheat oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Whisk together cottage cheese, eggs, maple syrup, and vanilla in a bowl until smooth.
  3. Stir in oats (or almond flour), cinnamon, and baking powder until well combined.
  4. Gently fold in the diced apple to evenly distribute.
Baking
  1. Pour the mixture into the greased baking dish and spread evenly.
  2. Bake for 35-40 minutes until golden and a toothpick comes out clean.
  3. Let cool slightly before slicing and serving.

Notes

For a make-ahead option, assemble the batter and refrigerate overnight. Increase bake time by 5-10 minutes if batter is cold.
