  • 4 cups mixed vegetables (e.g., bell peppers, zucchini, carrots, broccoli) Choose a mix that looks fresh and crisp.
Seasonings

  • 1 teaspoon salt Base for flavor.
  • 1 teaspoon pepper Essential seasoning.
  • 1 teaspoon garlic powder Provides a mild garlic flavor.

Method
 

Preparation
  1. Preheat the air fryer to 375°F (190°C).
  2. Wash and chop mixed vegetables into even-sized pieces.
Tossing
  1. In a bowl, toss the vegetables with olive oil, salt, pepper, garlic powder, and herbs if using.
Cooking
  1. Place the vegetables in the air fryer basket in a single layer.
  2. Cook for about 10-15 minutes, shaking the basket halfway through, until the vegetables are tender and lightly browned.
  3. Remove from the air fryer and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Reheat in the air fryer or a hot skillet for best results.
